“初食材”-“牛のアキレス腱”の煮込みスープ-料理?!-“濃厚”!!コラーゲンの塊を食べてみた!!

コロナの前に・・
最近"熱中症"気味の様子です。
水分は多く摂取しているのですが,
先日から高周波数の"耳鳴り"が多くて,
歯が痛い。歯が痛いといっても
"歯全部"が痛い。歯の全部が突然
虫歯になるという事は稀なこと
でしょうから,発汗に依る電解質(特に
塩分)が減少しているのでしょうか。

日本だけでなく太平洋諸国は
通年を通して異常な気象・気候となっています。
皆さんはどうお過ごしですか?

そんな中で,
先日,妙な"煮込み"を始めていました。
何を溶かしているかというと"牛のアキレス腱"です。

生まれて"初"食材の料理?なのですが,
ご周知の通り私はあまり手の込んだ料理が出来なくて,
兎に角"牛のアキレス腱"を煮込んでスープにしてしまおう
と必死になりました!

私の場合は生の"牛のアキレス腱"でしたので,
水で洗って血や汚れは落としてから
"下茹で"はしました。

で,ネットなんかで調べると
"牛スジ"="牛のアキレス腱"と考えてよさそうです。
でもなんか個人的には微妙に食材が違う様な気がしますが
気のせいでしょうか?

"下茹で"の水を変えた後は,長ネギと生姜,ニンニクは5.6粒
を入れてあとは弱火で"ひたすら"煮込み続けました。

たいした鍋の大きさではありませんが,足した水は何リットル
になったか覚えておりません。

"ひたすら"と言ってもずっと台所にかじりついている訳にも
いかず仕事や外出もするので,煮込まない時間は鍋ごと冷蔵庫の
野菜室で"寝て"貰いました。

途中で長ネギの青い部分は破棄しましたが,3日目
くらいからか,"牛のアキレス腱"以外は何もかも溶けてしまいました。

牛スジの煮込み料理で1.2時間は全然"甘い"ってネットのレシピには
あったので,3日間かけて6時間以上は弱火で煮込んでしまったかも。

日本人の場合,関東地方の人より関西の人の方が"牛スジ"のレシピに
詳しい方が多いと聞いていました。

関西地方は"おでん"等にも使われています。
3日間の間に,西日本の方で生まれた女性に"牛のアキレス腱"の話を
しました。"圧力鍋"があると早いですよ・・と言われましたが,
私はそんな良い調理器具持っていないわけですw。

結果的には3日こつこつと地道にひたすら煮込んで,白い謎の液体に
なりました。あとは塩のみの味付け(多少浮気して鶏ガラの素を入れた)
で舐めてみたら・・んん・・・w。

"コラーゲン"の塊みたいな液体ですね!
味はこってりしていて実に濃厚です。
もやしと豆苗でスープの濃厚さを薄めて食べました。

驚いたのは,"牛のアキレス腱"を齧ってみたら,
もう歯で噛まなくても口の中で溶けてしまう程に柔らかくなっていました。
最近,奥歯で噛むと歯の全体が痛い私にとってはその点だけは良かった!

"コラーゲン"を馬鹿にしている訳ではありませんが,私は
"肌"に良い(お肌がつるつるに成る?)くらいの知識しか持ち合わせいません。

正確には"コラーゲン"の摂取で皮膚の弾力の改善や、
"ひざの伸び"の改善が期待出来るそうです。

できあがったスープを飲んでみて,
自分自身の評価はあまり高くはなかったのですが,
家族のほうは高評価でした。

また作ろうかといえば・・
自分の場合は考えちゃいそうです!
